Ingredients
Scale:
2 cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs, at room temperature
1 teaspoon vanilla extract
½ cup buttermilk (or regular milk with a squeeze of lemon juice for a similar tang)
4 medium apples, peeled, cored, and chopped
1 tablespoon lemon juice
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well blended.
In another bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until incorporated.
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients.
In a separate bowl, toss the chopped apples with lemon juice, sugar, and cinnamon.
Fold the apple mixture into the cake batter gently using a spatula.
Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool in the pan on a wire rack for about 10 minutes, then transfer it to the wire rack to cool completely.
